These beautiful little green-hued wa es are loaded with antioxidants and pack quite the ca eine kick. They are a natural pairing with the Japanese Fried Chicken.
1Preheat your waffle iron to medium-high
2In a large bowl, whisk together the flour, sugar, tea powder, baking powder and salt.
3In a separate bowl, whisk together the egg yolks and yogurt; set aside.
4Using a whisk or electric mixer, whip the egg whites to firm peaks.
5Stir the yogurt mixture in the flour mixture. Stir in the butter. With a rubber spatula, gently stir in one-third of the egg whites. Fold in the remaining egg whites just until incorporated being careful not to over mix.
6Spray your waffle iron with cooking spray and spoon about 1/2 up of batter onto it.
7Cook until golden brown and slightly crisp, about 3 minutes.
8Serve immediately or place in a reheated 200°F oven if making in batches.
Make a big batch of these and freeze them individually. When you’re pressed for time, just pop them into the toaster or oven to reheat.
